The Perfect Cabbage Soup
A bright cabbage soup with white beans, tomatoes, lemon, herbs, and vegetable broth.
Ingredients

- 2 tbsp canola oil
- 2 tbsp fresh lemon juice
- 1 onion, diced
- 1 large carrot, diced
- 2 stalks celery, diced
- 4 garlic cloves
- ½ cabbage, chopped
- ¼ cup fresh parsley, chopped
- 1 tsp dried oregano
- 1 tsp dried basil
- ½ tsp salt
- 14 oz can chopped tomatoes
- 14 oz can lima beans or other white beans
- 4 cups vegetable broth
Instructions

Sauté vegetables
Heat oil in a large pot over medium-high heat. Add diced onion, carrot, and celery and cook about 5 minutes.

Add aromatics
Add minced garlic and spices and stir for about 1 minute.

Sweat cabbage
Add cabbage and let it sweat 5–10 minutes, stirring frequently.

Simmer
Pour in vegetable broth, diced tomatoes, and beans. Simmer uncovered about 10 minutes, or until vegetables are softened to your liking.

Finish
Remove from heat. Stir in lemon juice, parsley, salt, and pepper to taste.
Notes
- Lemon at the end keeps the soup bright.
