Black-Eyed Pea Soup
Instant Pot black-eyed pea soup with liquid smoke, coconut aminos, collards, and smoked paprika.
Ingredients
Soup
- 1 tbsp olive oil or avocado oil
- 1 medium yellow or white onion, diced
- 1 medium red bell pepper, diced
- 3 garlic cloves, minced
- 1½ cups dry black-eyed peas
- 3½ cups vegetable broth
- 2 bay leaves
- 2 tsp smoked paprika
- ¼ tsp cayenne pepper
- 2 tbsp coconut aminos
- 1 tsp liquid smoke
- ½ tsp sea salt
- ½ tsp black pepper
- 1 small bunch collard greens, chopped

Sauté aromatics
Use Instant Pot sauté mode. Cook onion in oil 4–5 minutes until translucent, then add bell pepper and garlic and sauté 1 minute. Press Cancel.

Pressure cook
Add remaining ingredients except collard greens. Stir to combine, secure the lid, and pressure cook on HIGH for 17 minutes.

Natural release
Allow 15 minutes of natural release, then manually release remaining pressure.

Finish greens
Remove bay leaves. Stir in collard greens and adjust seasoning to taste.

Serve
Serve with white or brown rice, cornbread, or roasted/baked sweet potatoes.
Notes
- Liquid smoke gives the classic smoky bacon-style note; do not skip it if you want that flavor.
- Flavor deepens overnight.
- Freeze in individual portions for easy meals.
