Ingredients

The Perfect Cabbage Soup

Oils

  • 2 Tbsp Canola Oil

Fruits/Veggies

  • 2 TBSP Lemon Juice (fresh)
  • 1 Onion
  • 1 Large Carrot
  • 2 Stalks Celery
  • 4 Cloves Garlic
  • 1/2 Cabbage Chopped
  • 1/4 Cup Fresh Parsley chopped

Spices

  • Tsp Dried Oregano
  • Tsp Dried Basil
  • 1/2 Tsp Salt

Dry Ingredients

  • 14oz Can of Chopped Tomatoes (Broiled of possible)
  • 14oz Can of Lima Beans or Other White Beans
  • 4 Cups Veggie Broth


Instructions:

 

  1. Heat the oil in a large pot over medium-high heat, then add the diced onions, carrot, and celery and cook that B for 5ish minutes. 
  2. Add the minced garlic and spices and stir and let simmer for a minute or 2. 
  3. Add the cabbage and let it sweat for 5-10 minutes, stirring frequently.
  4. Pour in the vegetable broth, diced tomatoes, and beans and let it simmer uncovered for 10 minutes, or until the vegetables are softened to your liking. 
  5. Remove the cabbage soup from the heat and add the lemon juice, parsley, and salt and pepper to your liking.
  6. Enjoy!
