🧄 Ingredients

  • 3-4 large baking potatoes 
  • 5 cups fresh broccoli florets, chopped
    (about 2 heads) 
  • 2 tbsp butter 
  • Salt & black pepper, to taste 
  • 1⅔ cups sour cream
    (adjust for desired creaminess) 
  • 1 Full package morning star bacon 
  • Full Stack of green onion, sliced 
  • 2 cups sharp cheddar cheese, Freshlty shredded

🔥 Instructions

1️⃣ Bake the Potatoes

  1. Preheat oven to 375°F (190°C). 
  2. Wash and scrub potatoes thoroughly. 
  3. Pierce each potato several times with a fork. 
  4. Wrap tightly in foil and place on a baking sheet. 
  5. Bake for 1 hour, or until tender.
     

2️⃣ Cook the Broccoli

  1. About 10 minutes before potatoes are done, bring a medium saucepan (¾ full of water) to a boil. 
  2. Add broccoli and gently boil for 5 minutes. 
  3. Drain well in a colander.
     

3️⃣ Build the Casserole

  1. Remove potatoes from foil and place in a large bowl. 
  2. Coarsely chop potatoes with skins on. 
  3. Add butter, salt, and pepper; stir until butter melts. 
  4. Stir in: 
    • Sour cream 
    • Bacon pieces 
    • Chives or green onion 
    • Cooked broccoli florets
    • Shredded cheddar cheese
       

4️⃣ Bake

  1. Spoon mixture into a casserole dish sprayed with cooking spray. 
  2. Cover with foil. 
  3. Bake for 15 minutes, or until heated through and cheese is fully melted.
     

🧡 Notes & Tips

  • Sharp cheddar gives the best savory punch. 
  • Add extra sour cream or a splash of milk if you want it creamier. 
  • Reheats extremely well (expect some color fro the bacon) — great for holidays and leftovers.
