Ingredients

Lemony Dijon and Shallot Veggies with Tofu

Oils

  • 1.25 Cup Olive Oil

Fruits/Veggies

  • 1/2 Cup Lemon Juice ( 2-3 big lemons)
  • 1 Lemon for fancy slices
  • 2.5 Tbsp Dijon Mustard
  • 2 Fat Shallots - (I'm talking full bulb here)
  • 4 Tbsp Chopped fresh Rosemary
  • 8oz Fingerling or other small potatoes
  • 4 Heads of Broccoli, cut into small pieces

Spices/Sugars

  • 1.5 Tbsp Agave
  • 2 tsp Salt
  • 1 tsp Pepper

Protein

  • 2 15oz Blocks of Tofu


Instructions:

 

1. Go ahead and preheat the oven to 400 degrees(F).


2. Let's cut up these veggies:

  • Cut the broccoli into 1" pieces and place in a bowl
  • Cut the potatoes in half and place in a bowl
  •  Cut the tofu into 1"x1/2"x1/2". I cut down the center on the long edges  first, and then make 4 slices across the short edge. This will give 20 pieces at about that measurement.  


3. Now lets put this sexy Lemony vinaigrette together:

  • Grab medium sized mixing bowl and mix together the lemon juice, Dijon mustard,  agave, and salt. Then add the shallots and rosemary and mix some more. 
  • Whisking is important for the right texture here... Slowly add the olive oil, whisking (go buy a whisk, forks suck for this) the entire time until the olive oil is fully incorporated. Season with a few pinches of salt and pepper.


3. Let's coat this delicious mess:

  • Throw the tofu in a bowl and add 1/3 of the vinaigrette, toss to coat. Grab a pan, line it with foil and parchment paper, drop those tofu into some organized lines (about an inch apart). You can also do this with just parchment paper, or just throw them into the pan if you are a monster... Totally up to you, fam!


4. Same for the the potats and broccoli.

  1. Toss them in 1/3 of the vinaigrette and line them up on another pan with foil and parchment. 
  2. Potatoes go on one pan, and broccoli on another.
  3. Add some lemon slices to the pans, this makes more of a difference than you might think in flavor.


5.Grab the Tofu, Broccoli, and Potato pans.

  • Place the Potato and Tofu pan on the top rack, and the broccoli pan on the bottom rack.
  • Let these cook for 20-25 minutes.
  • Now go do the dishes while these cook, you wont regret a clean kitchen. :)
  • DING! Pull the pans out after the timer goes off, one at a time, to flip the contents. 
  • Cook another 20ish minutes.
  • You know its ready when everything looks roasted af, tofu is firm, potatoes are soft, and broccoli is sightly charred.
  • Give that broccoli more time if needed, it's the hero in this story and deserves the time.


Serve with extra lemon juice and salt as desired.
