Best Carrot Cake Recipe

Cooking Tools You Will Need

  • 2 mixing bowls (large)
  • Whisk
  • Rubber spatula or wooden spoon
  • Measuring cups and spoons
  • Grater (for carrots)
  • Can opener (for pineapple)
  • Two 9-inch round cake pans or one 9×13 pan
  • Parchment paper (optional but recommended)
  • Cooling rack
  • Electric mixer (hand or stand) for frosting

Ingredients

For the Cake

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 ½ tsp baking soda
  • 1 ½ tsp ground cinnamon
  • ½ tsp ground ginger
  • ¼ tsp ground nutmeg
  • ½ tsp salt
  • 4 large eggs
  • 1 ½ cups granulated sugar
  • 1 cup brown sugar (packed)
  • 1 cup vegetable oil (or melted coconut oil)
  • 2 tsp vanilla extract
  • 3 cups grated carrots
  • 1 cup chopped walnuts
  • ½ cup crushed pineapple (drained)

For the Cream Cheese Frosting

  • 1 cup (225g) unsalted butter, softened
  • 16 oz (450g) cream cheese, softened
  • 4 cups powdered sugar
  • 2 tsp vanilla extract
  • Pinch of salt

🔥 Instructions

1. Make the Cake

  1. Preheat the oven: Preheat to 350°F (175°C) and grease two 9-inch round cake pans. Line the bottoms with parchment paper for easy removal.
  2. Mix dry ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt.
  3. Prepare the wet ingredients: In a large bowl, beat the eggs, granulated sugar, and brown sugar together until smooth. Slowly add the oil and vanilla extract, continuing to mix until well combined.
  4. Combine: Gradually fold the dry ingredients into the wet mixture. Add the grated carrots, walnuts, and crushed pineapple, and gently mix until just combined.
  5. Bake the cake: Divide the batter evenly between the prepared pans. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for about 10 minutes, then turn them out onto a wire rack to cool completely.
  6. Make the frosting: In a medium bowl, beat together the cream cheese and butter until smooth. Add the powdered sugar, vanilla extract, and salt, and beat until creamy and fluffy.
  7. Assemble the cake: Once the cakes have cooled, frost the top of one layer, then place the second layer on top. Frost the top and sides of the entire cake.
  8. Garnish: If desired, sprinkle extra chopped walnuts on top for garnish.
  9. Chill and serve: Refrigerate the cake for at least an hour to allow the frosting to set before serving.
