Ingredients

Oils

  • 2 Tablespoons Avocado oil (or other high heat oil)

Veggies

  • 4 Garlic cloves
  • 1 Big-ass onion
  • 1 Bell pepper (I prefer orange or yellow)
  • 1 Cup frozen corn

Spices

  • 1 tsp ground cumin
  • 3 tbsp chili powder
  • 2 tsp salt
  • 1 tsp pepper
  • 1 tsp cayenne 

Cans

  • 28 oz Diced tomatoes
  • 15oz Crushed tomatoes (or tomato sauce if you prefer)
  • 15oz Kidney beans
  • 15oz Black beans
  • 15oz Pinto beans
  • 15oz Butter beans

Protein

  • Impossible beef


Instructions:

  1. Add the oil to a large pot and sauté the veggies with half the salt over medium heat for 10 minutes or until tender and charring. Once your veggies begin to char, you might add a tbsp of water to keep them from burning and sticking, up to you.
  2. Now, create a circle with your veggies, add a splash of oil to the naked center of the pan, and drop that thawed impossible beef in the center. Cut it up so that it resembles what you think it should resemble. Whenever you feel like it's right, stir the veggies in with the impossible beef. Do this before your veggies start to burn, but also give that faux-beef some time to cook.
  3. Add the spices, corn, and beans and cook over medium heat, covered, for 7ish minutes. 
  4. Add in the tomato and tomato sauce/crushed tomatoes and let simmer for 10 more minutes. 
  5. Season with salt. If more spice is desired, add hot sauce or cayenne pepper to taste. 


Optional version/garnishes


Frito Pie Change-up:

  • Stack that bowl 1/4 full of Frito's
  • Add a bunch of that chili
  • Add a dollop of Sour Cream, a few squirts of Tabasco, and a couple tbsp of diced onions if that's your thing.


Also goes well with white rice or cornbread.
